Franco it’s my new favorite thing… It’s basically just fermented pineapple rind and you can add all kinds of stuff in it… Like ginger, chilies, star anise, cinnamon… Whatever you want it’s a probiotic. Plus it makes as well with tequila. Lol

we used to sell it. grainassance (sp?) brand was good...plain, sesame-garlic, mugwort
or cinnamon-raisin - and there was a better brand i ordered directly from the maker, some literally mom & pop company (an old asian couple) about 3 bucks for a 10-11oz square. same weight now, divided into 6 pieces, is >$10, apparently.
