Uncle Michael, I must take exception with the no guilty pleasure edict. I was listening to The Grateful Dead from 1971 at the Fillmore East, and Pigpens rap on Good Lovin/Lovelight bordered on embarrassing. Would not wash today for all sorts of reasons. But it was along time ago, and it was Pigpen, so I rolled up the widows in my truck and put aside my revisionist displeasure and kind of dug it.

oopsy, just posted this to Bryce's playlist....
I get very good results with a jar and a microwave for "steamed" milk. Shake that thing, then heat it in the evil radiation machine (after taking off the lid). Then pour espresso or just good strong coffee into it and top with the sprinkle of your choice.

Now we haven't had a dedicated coffee machine of any kind for over a decade, just multiple sized french presses and an ibrik or two. I don't miss having a machine on our counter. I am sort of anti counter gadgets in general.

Chemex has two filters: white (bleached, perhaps?) and "natural." For years I have used "natural," but had to change to white recently. Haven't noticed a difference in flavor, but maybe I'm being poisoned slowly, drip, drip, drip...

Don't get me started, Franco. Peet's has declined in quality precipitously since the acquisition by some Acme-whatever investment company. They now compete directly with Starbuck's. I recently visited only to buy the natural Chemex filters, which they do carry. However, it rang in at a higher price than the sticker, so I protested. They wouldn't give it to me for the lower price. I complained to HQ. They replied and asked for my address to ship a free box of natural filters. Since then, nothing. Had to buy from a coffee roaster in town that only carries the bleached ones.

I have an espresso machine I haven't used in years, it doesn't work now and I'm not sure what to do with it. I use a ceramic pour-over device now, with unbleached filters. I've held onto my french press and stove-top espresso pot because I like to imagine that if I ever have a bunch of house guests at once I'll be prepared to accommodate different tastes.

Somebody brought in some of the civet-poo coffee. Despite moral reservations about people factory-shoveling coffee beans through those poor critters, I tried it since it was already gifted... it seemed smooth, which I guess is maybe supposed to be the point, but it didn't particularly grab me.

Afternoon! Joining the coffee census, I use a French press on weekdays before work, and a Chemex on weekends (when I have time to time the pour). I think I actually have some old espresso machine my mom found at a yard sale, but I have no idea if it works, or how to use it if it does.

Umm... on the question of bleached versus those brown "natural" paper filters:

I thought I should like the brown filters, but they smell a lot more like a paper mill when you hit them with boiling water than the Peet's bleached ones. Of course, good technique is to hit them with some boiling water, discard that water, then add ground coffee... but still, something which starts out with more off flavors seems worse than something which starts out with fewer.

And as the name implies: the implication is that the Peet's bleached filters use oxygen (do they use hydrogen peroxide in the process maybe?) as the oxidant rather than chlorine. Aren't dioxins a byproduct of processes involving chlorine?

Also one of my great pleasures in life is my bi-weekly trip to the old-timey bulk coffee store in Boston's North End. Most of their equipment is from the '30s, and they know my name and regular order (one pound Copenhagen roast, whole bean). In the summer they have a big steel drum of Italian Ice for a dollar a cup. It's lovely.

Like I said it is a low cost one I wouldn't say the absolute highest quality in craftsmanship but I would assume your objective is not to drink cappuccino all through out the day on a regular bases. i used to make hot chocolate with almond milk, cocoa powder and honey. i could make it very strong and not overly sweet and it was delicious. (sometimes adding a drop of cognac, whiskey, or sambuca, ameretto....)
but the cocoa i bought recently is disappointing.

I made a wonderful CD of covers of Highway 61 Revisited, including 3 bonus tracks of songs that were recorded at the same time but not included. The only problem I had was with "Tombstone Blues", which I solved by going to the Richie Havens version on that stupid movie soundtrack. Good cover.
