Over the years, I occasionally dipped my toe back in the water and checked out later stuff online but just couldn't ever get into it.

	1:04pm βrian: I make one particular "fancy" soup that has a really smooth, rich consistency: roasted corn bisque. Lots of cumin and a little cayenne to give it a boost. Finished with cilantro and heavy cream. The New Year's version includes smoked salmon.

	1:17pm northguineahills: When cooking a dish for the first time, I look up a dozen recipes, and average the ratios in my head (and to my tastes). After about 4-5 times if I master it, I can do it by heart.

	1:47pm crateslinger: Yeah, they're called lift vans and they clip together with wire brackets - only used for warehouse storage tho - but you can stack them to the sky. The problem with building a reusable unit for shipping is that every artwork is a custom job. Otherwise you're paying dearly to ship empty interior space.

	2:13pm crateslinger: and violence! Vermont is not supposed to be a violent drug dungeon but Brattleboro is a good place to get thrown through a window by a cocaine dealer.
	2:14pm zpulpa: its creepy, I went to school near there and felt a strong sense of urgency to get OUT!
	2:15pm crateslinger: I grew up in the area. We used to go to VT to buy beer in the 80's but now it's like a dark suburb of Cincinatti or something.
	2:16pm crateslinger: More like Dayton I guess.
	2:16pm βrian: Nothing's is written down, but I got the overview from a chef I worked with years ago. He just came up with it one day. In a large cast-iron skillet or roasting pan, roast corn that's been dressed lightly with olive oil and (ideally, fresh) rosemary. When it's nice and caramelized, dump it in a large pot with stock/water and a few potatoes. Season with lots of cumin and a bit of cayenne. (The pique of the cayenne will diminish when you finish.) Salt to taste. Simmer for a good long while. Puree, and pass through a fine strainer/chinois. Finish with heavy cream, then puree cilantro into a portion that you mix back in.
	2:17pm Barney Grubbs: when I lived in Lebanon, NH, I always used to like stopping in Brattleboro for beer at McNeill's and record stores on the way to/from home, but I could imagine it being a weird place to live
	2:18pm crateslinger: I know McNeill's and there was a place nearby called the Weathervane, but I think the cops or the town actually closed it.
	2:19pm Barney Grubbs: I haven't lived up there for almost 10 years--things have probably changed a lot
	2:22pm crateslinger: There's actually a large well-known mental hospital in town and a lot of people who get released from there stick around, then there's the summer camping gutter punk travelers, and then you've got the junkies and the cocaine and even meth now. People sleep down along the train tracks along the river and stab each other.

	2:39pm crateslinger: Burlington might as well be Tribeca for all the New Yorkers. There's lots of nice places in Vermont and New England in general, but you want to stay out of the old mill towns. Basically any town with old brick buildings on the Connecticut River you want to stay away from.

	2:59pm crateslinger: They're not mill towns anymore and unless they are stops on the antiquers highway then most old mill towns in central New England seem to me largely drug-riddled ghost towns. Pittsfield, Worcester, Springfield, Holyoke, Brattleboro. I'm being anectotal and maybe a bit facetious, but I stand by this. My family is still up there.

	1:46pm Wild Neil\|\|Peace All: Inventing stuff is really, really, really REALLY hard. Try it some time, I did , it was a gigantic effort with zero payoff, except for the experience.
	1:47pm crateslinger: Yeah, they're called lift vans and they clip together with wire brackets - only used for warehouse storage tho - but you can stack them to the sky. The problem with building a reusable unit for shipping is that every artwork is a custom job. Otherwise you're paying dearly to ship empty interior space.

	2:15pm crateslinger: I grew up in the area. We used to go to VT to buy beer in the 80's but now it's like a dark suburb of Cincinatti or something.

	2:16pm βrian: Nothing's is written down, but I got the overview from a chef I worked with years ago. He just came up with it one day. In a large cast-iron skillet or roasting pan, roast corn that's been dressed lightly with olive oil and (ideally, fresh) rosemary. When it's nice and caramelized, dump it in a large pot with stock/water and a few potatoes. Season with lots of cumin and a bit of cayenne. (The pique of the cayenne will diminish when you finish.) Salt to taste. Simmer for a good long while. Puree, and pass through a fine strainer/chinois. Finish with heavy cream, then puree cilantro into a portion that you mix back in.
	2:17pm Barney Grubbs: when I lived in Lebanon, NH, I always used to like stopping in Brattleboro for beer at McNeill's and record stores on the way to/from home, but I could imagine it being a weird place to live

	2:59pm crateslinger: They're not mill towns anymore and unless they are stops on the antiquers highway then most old mill towns in central New England seem to me largely drug-riddled ghost towns. Pittsfield, Worcester, Springfield, Holyoke, Brattleboro. I'm being anectotal and maybe a bit facetious, but I stand by this. My family is still up there.
