Did I miss the pimento cheese recipe last week?

Uncle Michael’s Pimento Cheese Spread/Dip

Ingredients:

8 oz. grated orange extra sharp cheddar (not any fancy brand!)
4 oz. cream cheese, room temperature
4 oz. mayonnaise
1 tsp. hot sauce (I prefer Melinda’s Original Habanero XXXtra Hot Sauce)
2-4 scallions (depending on size) finely sliced
1 four-ounce jar of diced pimientos (if substituting roasted red peppers, add a ¼ tsp salt)

Instructions:

With a hand mixer, cream the cream cheese, mayo and hot sauce.
Fold in grated cheddar, scallions and pimientos

Anybody have good ideas for recipes with a bunch of red and green peppers? I don't want to do a ratatouille, I've already done sausages smothered in onions and peppers, I don't want a pepper sauce, and I'm blasé about stuffed peppers, though I might try the latter with an interesting twist.
