... i cut out the thickest parts of the stems of collards, cut them into about 1cm pieces and put them in at least 10 minutes before the rest, so they're nice and tender without overcooking the leafy parts. i add the garlic just before i turn the heat off; add the olive oil on the plate.
if i'm adding ginger i add it near the beginning.

I have nearly no experience cooking w/ dead animal products (wife's a vegan), but I'm a 'learning myself. I'm only good at cajun-style seafood boils. I just need to transfer that to my east asian fusion cooing, (my other specialty is Mexican fusion).
