Brown pot roast on both sides. Put a few slices of onion and a whole celery stalk in. Put chopped garlic, salt and pepper on one side of roast. Flip over, repeat. Pour beer and chicken stock to BARELY cover. Add a dash of Worchestershire sauce. Cook for 1 hour, flipping once. Remove veggies if you want. Put in lots of potatoes, onion slices, carrots, whatever. Really pack 'em in. Bring to boil. Let go another 1 - 1.5 hours, flipping once. Add liguid if necessary. When tender, remove everything. Let roast stand and slice. Cook down the sauce a little. Thicken if you want to (I didn't). Taste and correct seasonsing. Put everything back in until warmed. Then eat. | |
