	3:40am DaveinPA: Hello everyone! I'm making Water Kefir!
	3:45am CarolCrow: Dave, what is Water Kefir?
	3:47am DaveinPA: Apparently you can culture Kefir on sugar water instead of dairy product - this is a new thing I am experimenting with, for probiotic reasons.
	3:48am DaveinPA: It's kind of like sourdough bread - once you get the process going, you can keep making more batches from the same culture that you keep in jars in the fridge.

	4:07am DaveinPA: @CarolCrow - it's rather easy, actually - it's mostly down time. You mix warm water, sugar, and the packet of grains to get them started, then set aside for a few days in a warm spot. Then you make a new sugar water mix and put the grains into that, and in another few days you have drinkable kefir. You can also do a secondary ferment with fruit if you want a more bubbly / flavored drink.
