Why didn't anyone tell me about making a roux in the oven in the first place? I think of all the times I burned it on the stove top.

One time, I actually made a large amount on the stovetop, and it was just brown enough to taste like toast, and not burnt. So all that i did not use, I froze. And for years, I had a frozen block in my freezer that I would chip a chunk from whenever I wanted to make a gumbo. Once it was finished, I failed in my next few attempts and never made a gumbo again.

Oven roux? Maybe there is now hope again!

@ βrian: Yes, but depending on the heat, it might be 7 minutes, or 9 minutes and 3 seconds, and if you look away for a few seconds at the wrong time, then oops! Ruined again!. But in the oven, I would assume, that the process is much slower, so the margin of error is larger, thus reducing the risk.

I assumed that βrian was referring to a stove-top roux in the skillet, when he stated the shorter times. I don't recall how long that took, but I just recall that often it became tedious, and my attention would be divided, then I would cook it a minute too long and ruin it.

The oven method sounds much safer and without such a potential to burn it by mistake.
