That's where dude ranches got their name, since it was for people who'd never been outside of a city. Harper's even had a contest for King of the Dudes in the 1880s or 90s.

	4:37pm Cecile: do fridge pickles. Also soak anything you put into the hot brine for refrigerator pickles in ice-cold salt water for about 1/2 hour. Rinse and then pour the hot brine over. Also, smaller is better in terms of crispness. HTH.

	♥ 4:53pm coelacanth: i will try Cecile's way; but if you want to cook it - break off 2-4" tops -set them aside; break the remaining stems into 1-1.5" pieces. OR if you know that this batch is not tough or stringy, cook the bottom pieces whole... compost the very bottoms if they're very tough or very white; steam the pieces for a few minutes at most.(they change hue slightly) add the tops for the last .5-1 minute, depending on thickness. (...of course most folks cook them whole, but the bottoms & the tops don't retain crispness at the same rate.) (...olive or flax oil, salt or ume vinegar, GARLIC...mm-mm!)

	♥ 5:00pm coelacanth: Cecile -true too. sometimes i put the bottom sections under fatty fish in a cast iron skillet in the oven with water and a little oil.(& maybe onion, ginger, etc). it cooks them and keeps the fish away from the pan, which is easier clean-up... then i put the tops on top of the fish for the last few seconds before the fish is ready.

That's where dude ranches got their name, since it was for people who'd never been outside of a city. Harper's even had a contest for King of the Dudes in the 1880s or 90s.

	♥ 4:53pm coelacanth: i will try Cecile's way; but if you want to cook it - break off 2-4" tops -set them aside; break the remaining stems into 1-1.5" pieces. OR if you know that this batch is not tough or stringy, cook the bottom pieces whole... compost the very bottoms if they're very tough or very white; steam the pieces for a few minutes at most.(they change hue slightly) add the tops for the last .5-1 minute, depending on thickness. (...of course most folks cook them whole, but the bottoms & the tops don't retain crispness at the same rate.) (...olive or flax oil, salt or ume vinegar, GARLIC...mm-mm!)
