Potato Chowder: Brown chopped bacon and chopped onions until fat is rendered. Add cubed new potatoes or red potatoes and chicken stock or vegetable broth. Bring to boil and simmer. When potatoes are tender, add milk or cream, season with nutmeg, sea salt, cayenne and freshly ground pepper. Make roux with equal parts flour and butter cook until flour is lightly brown and nutty-smelling. Stir in roux until soup is desired thickness. Sprinkle with paprika and serve.

Last minute recipe for potato-leek soup. Melt 6T (3/4 stick) butter in large saucepan over medium-low heat. Stir in 4-5 pounds (11 cups) of sliced and washed leeks (white and light green parts only) with 2 cloves minced garlic. Cover and cook until leeks tender, 15-20 min. Stir in 6 cups low-sodium chicken broth, 5 medium red potatoes (1 3/4 lbs) cut into 1/2 inch pieces, 1 tsp minced fresh thyme (or 1/4 tsp dried), 2 bay leaves, 1 tsp salt. Simmer and cook until potatoes are tender, 15-20 min. Smash some of the potatoes against the side of the pot to thicken the soup. Remove bay leaves and season w/salt and pepper to taste (paprika works, too).
