My introduction to Tom Waits was seeing him open for Frank Zappa in early '74 -- in between his first two records. The book says that tour was a nightmare for him, because of all the impatient fans yelling for "Zappa!!!"

Perhaps you saw the sad photojournalism news about Michel du Cile of the Washington Post. Died of heart failure while covering the Ebola crisis in Liberia. I never had the pleasure of meeting him, but many of my friends in the biz are heartbroken. He was one of our best.

I like brining turkey breast (Michael Ruhlman's chicken brine works well), ruhlman.com...

Then I like to make a compound butter mixing together a stick of softened butter, salt (unless the butter is saltened), something sweet like honey or maple syrup and some chopped herbs of your choice (not rosemary though, too overpowering). Take the mixture, roll it like a joint in plastic wrap, chill, then slice into disks and put under the skin before roasting. I like to roast in a pan on top of sliced onions, garlic, a Parmiggiano Reggiano cheese rind if you have one and a little water so you get a nice jus while you roast.

My old MO used to be put butter with garlic and herbs under the skin. Put a lemon and an onion in the cavity. Start hot with foil on the breast. Cook it hot for 15 minutes. then take off the foil and turn it down to 350 and cook until it reaches temperature.

Makes a crazy great gravy.

OK, heard the turkey breast request: Here's what I do (and I do them rather frequently as one of our faves).
Gently pull up skin to separate from flesh but not break skin. Place under skin in about 4 separate areas of the breast an emulsion (right term?) Emulsion can be, as an example (use what you have / get creative): Seasoned (salt/pepper) butter pats squished w/ smashed garlic clove, lemon zest and sprigs of fresh thyme, rosemary, sage, parsley. Or you can do the same with feta cheese pieces or crumbles.

Oil breast [EVOO], season lightly w/ salt and pepper. Place upside down on V-rack in shallow pan: Place on lowest oven shelf at preheated 325 degrees. Cook 20 min. Rotate breast to its side and baste w/ chicken stock and roast another 20 mins. Rotate to other side and baste and rotate every 20 min. as many times needed within total cooking time, but ending with 20 mins. breast up.

Michael -- just remembered I needed to correct my hastily written "recipe": Not emulsion but compound is what I meant with the herbs+butter or herbs+feta. I knew emulsion didn't sound right, but I was trying to multitask too much at the time. Hope you had a tasty turkey however you got it done!
