	1:18pm Cecile: Make turketta. Either flatten the breast and fill it with herbs and garlic, or just stick garlic cloves into slits on the breast.
	1:19pm Cecile: brown, and then cook in the crockpot with chicken stock and a little wine. many recipes on the Web.
	1:19pm pacific standard simon: I'm big on poaching chicken breast in brine, then finishing on a grill pan under the broiler. Maybe it would work for turkey?
	1:19pm Uncle Michael: I like the idea of flattening it, filling it and rolling it.
	1:19pm Lane Steelpicker: Roast it simple. Some herbs, a few spices. Root veggies in the pan. Like a chicken. Carrots, onions, maybe parsnips or rutabaga in the pan. That's the vote of the steel picker.

	1:21pm Uncle Michael: I want to serve it with the usual mashed spuds, gravy...maybe some roasted brussells sprouts...cranberrys. I missed a traditional thankgiving dinner.
	1:22pm Lane Steelpicker: Cecile's sounds good too. But I like low-activity roasts: throw it in the oven, and do something else for a couple hours.
	1:22pm pacific standard simon: I braised a pork shoulder in apple cider and caraway seeds this week. After 4 hours, it was falling apart and delicious.
	1:22pm Cecile: roasted sprouts garnished with toasted pine nuts would be great. and sneak a little orange liqueur into your cranberries.
	1:22pm Uncle Michael: Rolled, filled with garlic, onions, spinach and herbs and roasted, maybe.
	1:22pm Lizardner Dave: I like brining turkey breast (Michael Ruhlman's chicken brine works well), ruhlman.com... Then I like to make a compound butter mixing together a stick of softened butter, salt (unless the butter is saltened), something sweet like honey or maple syrup and some chopped herbs of your choice (not rosemary though, too overpowering). Take the mixture, roll it like a joint in plastic wrap, chill, then slice into disks and put under the skin before roasting. I like to roast in a pan on top of sliced onions, garlic, a Parmiggiano Reggiano cheese rind if you have one and a little water so you get a nice jus while you roast.
	1:23pm Cecile: you can put it in a crockpot. And the flattening always takes less time than you think, if it's fully thawed.

	1:26pm Cecile: nom, lizardner dave. My old MO used to be put butter with garlic and herbs under the skin. Put a lemon and an onion in the cavity. Start hot with foil on the breast. Cook it hot for 15 minutes. then take off the foil and turn it down to 350 and cook until it reaches temperature. Makes a crazy great gravy.

	1:32pm kat330: OK, heard the turkey breast request: Here's what I do (and I do them rather frequently as one of our faves). Gently pull up skin to separate from flesh but not break skin. Place under skin in about 4 separate areas of the breast an emulsion (right term?) Emulsion can be, as an example (use what you have / get creative): Seasoned (salt/pepper) butter pats squished w/ smashed garlic clove, lemon zest and sprigs of fresh thyme, rosemary, sage, parsley. Or you can do the same with feta cheese pieces or crumbles. Oil breast [EVOO], season lightly w/ salt and pepper. Place upside down on V-rack in shallow pan: Place on lowest oven shelf at preheated 325 degrees. Cook 20 min. Rotate breast to its side and baste w/ chicken stock and roast another 20 mins. Rotate to other side and baste and rotate every 20 min. as many times needed within total cooking time, but ending with 20 mins. breast up.
	1:33pm Lane Steelpicker: When Maison Steel roasts a hunk o' meat, we often put a HDTR archive on, and listen as we cook and clean or garden. Got some bulbs to inter this weekend.

	1:19pm pacific standard simon: I'm big on poaching chicken breast in brine, then finishing on a grill pan under the broiler. Maybe it would work for turkey?

	1:19pm Lane Steelpicker: Roast it simple. Some herbs, a few spices. Root veggies in the pan. Like a chicken. Carrots, onions, maybe parsnips or rutabaga in the pan. That's the vote of the steel picker.

	1:21pm Uncle Michael: I want to serve it with the usual mashed spuds, gravy...maybe some roasted brussells sprouts...cranberrys. I missed a traditional thankgiving dinner.
	1:22pm Lane Steelpicker: Cecile's sounds good too. But I like low-activity roasts: throw it in the oven, and do something else for a couple hours.
	1:22pm pacific standard simon: I braised a pork shoulder in apple cider and caraway seeds this week. After 4 hours, it was falling apart and delicious.
	1:22pm Cecile: roasted sprouts garnished with toasted pine nuts would be great. and sneak a little orange liqueur into your cranberries.
	1:22pm Uncle Michael: Rolled, filled with garlic, onions, spinach and herbs and roasted, maybe.
	1:22pm Lizardner Dave: I like brining turkey breast (Michael Ruhlman's chicken brine works well), ruhlman.com... Then I like to make a compound butter mixing together a stick of softened butter, salt (unless the butter is saltened), something sweet like honey or maple syrup and some chopped herbs of your choice (not rosemary though, too overpowering). Take the mixture, roll it like a joint in plastic wrap, chill, then slice into disks and put under the skin before roasting. I like to roast in a pan on top of sliced onions, garlic, a Parmiggiano Reggiano cheese rind if you have one and a little water so you get a nice jus while you roast.
	1:23pm Cecile: you can put it in a crockpot. And the flattening always takes less time than you think, if it's fully thawed.

	1:26pm Cecile: nom, lizardner dave. My old MO used to be put butter with garlic and herbs under the skin. Put a lemon and an onion in the cavity. Start hot with foil on the breast. Cook it hot for 15 minutes. then take off the foil and turn it down to 350 and cook until it reaches temperature. Makes a crazy great gravy.

Place under skin in about 4 separate areas of the breast an emulsion (right term?) Or you can do the same with feta cheese pieces or crumbles. Oil breast [EVOO], season lightly w/ salt and pepper. Place upside down on V-rack in shallow pan: Place on lowest oven shelf at preheated 325 degrees. Cook 20 min. Rotate breast to its side and baste w/ chicken stock and roast another 20 mins. Rotate to other side and baste and rotate every 20 min. as many times needed within total cooking time, but ending with 20 mins. breast up.
