@pss - Def. grill pan if steaks from loin. If marinade I like some juniper in the mix, Finish w standard red wine shallot butter sauce, or port if you prefer things on the sweeter side.

"Lesser" steaks really need slow moist heat cooking or will be tough as nails.

Funny you ask, as I am currently defrosting venison sausage gifted by my lovely ex-husband! Breakfast tomorrow!

The Hot Chocolate tune reminded me of a time in my early teens playing that record with the bass turned up so loud to really enjoy the parts when they hold that low note. But then, the boosted bass started making the record skip.

Lunch today from my favorite gringo chef-owned taqueria = lamb cheek, pork belly, and smoked duck tacos. Yesterdays tacos = fried chicken livers, fried oysters & lengua (I am house/dog-sitting 1 block up from said taqueria, can you tell?).

All delicious, but am still grieving the closing of my fave "real" taqueria.

Thanks, efd and Sue P., for the Angel updates. I'm encouraged. They were, I think, the single loudest band I've ever heard live. (Yes at Angel Stadium and Messhugah at SF's The Pound vie for the honor, too.) My ears rang for a full week, thanks to the tizzy synthesizer shrieks.

As for hearty Mexican fare, I was just sharing with a work colleague details of my lunch on Sunday at a joint near where he lives in Concord, CA. Enchiladas en mole were sublime: spicy and sweet. Must return to Mercado del Sol.

On a recent visit to one of the excellent Mexican restaurants in this area, I was a total contrarian and ordered ribs, because the only local BBQ joint went belly-up (HA) right before I moved here. They turned out to be St. Louis style, and quite satisfactory.

Like I said, gringo-owned, so has some quirks. Corn tortillas yes, handmade in house yes, but tacos served in 1 thick rather thsan 2 thin, which I prefer. Tacos are served w lettuce & pico de gallo (so wrong) unless you request not. They do have cilantro & onions at the salsa bar, as well radishes, picked veg, salsas verde, roja & habanero, slaw, etc. Since it's gringo-owned you also get a side of rice (meh) and beans (good porky pinto or veg black), AND a huge amount of chips, which means you (or at least me) ends up with tons of leftovers for later.

Anyway, now that Los Camales is closed best tacos in Durham are at La Superior & Taqueria mi Puebla (which also makes killer ceviche tostadas), also Lopez truck is good. Best tamales are at la Vaquita and the shack behind Don Juan. All these places always have carnitas, pastor, lengua, cheeks, usually tripa, as well as the boring stuff.

I grew up in St. Louis, and stopped living there after college and I never heard of "St. Louis style" BBQ until a few years ago on a trip to Oregon. Now I hear it all the time on the Food Network and occasionally here in Chicago.

Back to ribs: I remember a friend from North Carolina in Chicago boiled the ribs before barbequing, but she boiled them enough that the rib bones were soft-they just kind of dissolved into a soft substance in one's mouth, without being splintery at all. So we were able to eat the ribs, bones and all.

Maybe my friend boiled them in vinegar. I just remember eating the ribs after they were all cooked and sauced and my teeth going through them, and one of us pinching a rib and it splitting in two as if it were made out of clay. We all were asking: "What's going on?" and she said: "I guess I boiled them too long before grilling them".
