@arvin: Why in highly developed countries like the US do half-educated people with attitudes think ordinary experiences of life are offensive? Answer: Because it is easier to try to one-up 300 million people's experience with a sentence or so of superficial criticism than it is to think up something that is both original and useful. The latter could take a lifetime of effort. The former is formulaic and *constantly* encountered. :-)

In north Brooklyn, in order to get decent Jamaican you have to go to Crown Heights or Bed-Stuy. T'would be nice if someone would remedy this situation (Golden Crust doesn't count). There was once a vegan Jamaican place on Graham Ave, but it turned into a burger & beer joint (Mothers) 3 years ago.

Pink slime means processed meat sterilized with ammonia etc. to kill the e. coli and other microorganisms before it's added back into ground meat. Any meat that has been in contact with entrails, or their contents, somehow has to be sterilized before using it, or people would get sick.

Chinese restaurateurs have been offering 'Tex-Mex' for quite a while.
It's just a matter of time before they move into Indian.
What are some other cross-ethnic restaurant types?
In NYC, especially in Manhattan, you have Albanians running pizza shops (e.g. Familgia).

Yep, just like we think of 1912 as really primitive, I'm sure the year 2112 will marvel at pink slime.

Now that the cat is out of the bag about pink slime, the meat processing industry will come up with a less yucky sterilizing method in the next few years. They're probably already work on it now that pink slime is getting "outed".

Let's hope the next method is actually progress.

About Indian moving toward being a cuisine well made by people from outside that ethnic background: In an Indian restaurant I used to go to before I moved a couple of years ago, the cooks in the kitchen were actually almost all Mexican. There's nothing impossible to make about any ethnic cuisine. It's just a learned skill. I assumed that the Indian/Pakistani cooks on staff had showed them how to make various dishes or do prep etc.

@kat: I just go by observed history. If you compare century to century going forward, often there are times where things, overall or net, got worse or knowledge was lost. But more often things move in a better direction, net or in the aggregate.

The 20th century had a lot of negative stuff (most of all big and small wars that didn't have to happen, but had to be dealt wiith somehow after they got started). Still: overall, there was more progress than not.
One example: In 1900 the life expectancy in the US was 55, now it's near 80. Because of actual improvements in nutrition, hygiene, medicine, etc., people overall have only aged about 75 years in the last 100 years. Unless people prefer being dead or living shorther lives to being alive and living longer lives, that's progress.

Do people do good things with their extra time? That's a much fuzzier discussion. But the extra time and opportunity are definitely there, with 80 years against 55.

Again, going by historical observation, societies go through a demographic transition as they move from poor and rural to developed and urban/suburban. European countries already have *below-replacement* birth rates (which is also a problem in various ways, as much as overpopulation would be).

Unless something that is not currently occurring starts to occur soon, other countries will be going through that transition to replacement-only durng the century we've still just started.

@G: yeah, I've tried to do some recipes at home, but you can't even get the ingredients in the shops here. You probably could in the capital, but here in the sticks... Then again, even in Helsinki, you can't get the proper fish to make kedgeree (another British/Indian recipe), so I am somewhat doubtful about even some of the ingredients.

no need to half 'em (if not too late). They cook in their own steam when placed (whole) in the oven. Add peppers (thick and meaty), sliced onions, cloves of garlic and some oil (+white wine or stock at will) and... yummy!!! :-)
