I use cheddar and gruyere, too, on occasion. Mostly use gruyere for quiche. Sometimes a decent, but not too expensive fontina works in mac 'n' cheese. But if I'm using relatively inexpensive cheeses I add a T or two of Worcestcheshire to the béchamel.

The other day I told someone who'd never seen "The Exorcist" that it's better than just a horror movie. Some of it hasn't aged well, and it's too much of a riffed-on, ripped-off, big-footprint movie to watch in an open or neutral way, but I'd still say if possession's your plot, it's a better movie than what one might expect, with good performances.

After waiting in line in Boston for Star Wars premiere, I thought it was el suckoooooo. Not at ALL what I expected.
