It was prepared in a savory brown gravy and, to my taste, was indistinguishable from roast beef. But the occasion was rather surreal, as we were lunching at an outdoor cafe where you could see local stray dogs wandering by on the town's main street. Ever go face-to-face with your meal?

I'm not totally sure what's distributed in Chicago, but look for Overgrown Orchard (from Gary), AeppelTreow (Burlington, WI), and ERIS Brewery and Ciderhouse (Chicago).

	7:48am Handy Haversack: I had a bottle of cider from the Finger Lakes the other day that was dry as a bone but with more complexity than most white wines because of the tannins. It was wild-fermented (no added yeast pitched) and aged on its lees for a year before being disgorged(!) by hand. Super stuff!

It was prepared in a savory brown gravy and, to my taste, was indistinguishable from roast beef. But the occasion was rather surreal, as we were lunching at an outdoor cafe where you could see local stray dogs wandering by on the town's main street. Ever go face-to-face with your meal?

It was wild-fermented (no added yeast pitched) and aged on its lees for a year before being disgorged(!) by hand. Super stuff!
