Generally true @head. However, for example, in middle eastern cuisine, there aren't as many sauces and curries. Many indian dishes are served in a curry broth or thick sauce. That said, Indian Makhani dishes are noted as Oriental spices.

they may not have shawarma/felafel in indian food but all those tomatoes and potatoes which are everywhere in their (modern) cuisine - and even the red chilis - those all came from central america

I mess with "regional" recipes all the time. It's not like IRL people always had the "right" ingredients around for what someone said the recipe was. In general, people have always improvised, everywhere.

@Mike W - ZM Dagar is part of a family that played a specific form of classical Indian music called Dhrupad - so there's other Dagar family members (esp. the vocalists - you could search for Dagar Brothers) who could be interesting for you. And checking out other Dhrupad musicians could be fruitful as well.

@mike w - funny, was just about to say what adrian elaine said, hahaa.

gosh, i'll have to think about that tho. i really, really love imrat khan. he usually goes from 0 to a million by the end of a raga, but always starts out super slow and low on the surbahar. sometimes his single notes trace out these unbelievably elaborate filigrees. totally intoxicating.

lalmani misra also just popped into my head. he played the vichitra veena, which is voiced by stopping the strings with a large smooth stone about the size of a chicken egg. that makes it almost impossible to be flashy, so vichitra veena players (that i've heard anyway) tend to tug on time a lot.

also on the dhrupad tip, the gundecha brothers are super amazing and basically responsible for making dhrupad a thing again these days. sadly, ramakant gundecha passed away about a year and a half ago, but their performances (and humor) could really make an auditorium soar.

I used to host a mostly Indian classical show many, many years ago. I started repeating myself a lot too and I was amazed at how small the combination of the station's library and my own collection had suddenly become :)
